When I was 5 my class took a field trip to a dairy farm and my eyes were opened to where milk came from. Shortly after that trip I decided I couldn't eat beef anymore! After a while I no longer could stand the smell of it cooking and so the taste of it was no longer good to me either. A long story short, until the popularity of turkey burgers and veggies burgers it had been a long time since I'd wanted to eat a burger. I love a good turkey burger or Boca burger with all the trimmings. Last year my sister turned Vegan for health reasons and since then I have tried many things I probably wouldn't have without her influence. This recipe is for her, I'm sure if she lived closer we'd dine on them together (hers with vegan cheese of course). If you are looking for a lighter burger or have a meatless night in your home and are in need of a new recipe; I highly recommend giving these a try. Enjoy and happy baking!
Ingredients:
1 can Black Beans, rinsed and drained
1 zucchini, small
1 carrot, small
1/2 onion, small
1/8 tsp basil
1/8 tsp thyme
1/8 tsp garlic powder
salt & pepper to taste
1-2 tbs oil or cooking spray
Directions:
Preheat your oven to 375ยบ. In a medium bowl mash the black beans, grate the zucchini, carrot and onion into the beans, stir to combine. Add the herbs and spices, divide the mixture into 4 and form into patties. In a oven safe skillet warm the oil and then cook the patties for 3-4 minutes per side, finish in the oven for 10 minutes. Using caution and an oven mitt remove the pan from the oven and cool 2-3 minutes, top with your favorite burger fixings and dig in!

ReplyDeleteWe go meatless once a week and I have tried a black bean burger but didn't like it. I've been looking for a different recipe; I'll have to try this one next. I love how it has zucchini in it!
