Peanut Butter Muddy Buddy

You probably already know we have a serious peanut butter addiction in our house and it’s not just me, the biggest fan is in fact my husband. Last week I had bought a couple of boxes of Chex® cereal (I ate it a lot right after our daughter was born) but honestly I had no idea what a hit it would be with my daughter. She would run to the pantry, point and motion for the box, this behavior lasted for a few days until she moved on to a new favorite snack. So this left me with more than half a box of plain rice Chex® and wondering what on earth I was going to do with them? A few status updates on Facebook by friends and I knew it was time to make some Muddy Buddy, but with a twist of course. I swapped the chocolate chips for peanut butter and halved the recipe to accomodate our small family and voila, a tasty treat. So go on, grab a bowl and a spoon and get to making this now. A crunchy, peanut-y, delicious snack your whole family is sure to love, I know you’ll enjoy!

Ingredients:

4 1/2 c Rice Chex®
1/2 c peanut butter chips
1/4 c peanut butter
2 Tbs butter
1/2 tsp vanilla
3/4 c powdered sugar

Directions:

In a microwave safe bowl combine the peanut butter chips, peanut butter and butter, cook on high for 1 minute. Stir until smooth, reheating in 15 second intervals if needed, then stir in the vanilla. Place the cereal in a large mixing bowl and spoon the mixture over the cereal, gently stirring to coat. Place the powdered sugar in a gallon zip top bag and add the cereal mixture and shake to coat. Spread the mix onto a wax paper lined baking sheet and let cool completely. Store in an airtight container.
