Ultimate Brownie Pie

Happy Pie Day everyone! I wanted to get in on the fun and celebrate this "food holiday" since I too love pie. I thought for a few days about what kind of pie I wanted to share with you all today and well to be honest… I have been craving brownies, so I thought there's my answer. You know I love a good brownie and what better way to celebrate 3/14 than with a slice of brownie pie? At first I debated whether or not to do a crust, but in the end I decided it just isn't pie without crust. So I opted for a super decadent candy bar crust. Think graham cracker crust, but with Peanut Butter Twix candy bars instead. This pie is truly a brownie lovers dream come true; a soft delicate crust, filled with a delicious fudgy, brownie dotted with three kinds of chips. I love that you can customize the chips and/or add nuts to create the pie of your dreams, we don't all have to like the same things. I hope you'll enjoy it a-la-mode, topped with fresh whipped cream or all alone; happy baking!



Ingredients:

for the crust:

5 Peanut Butter Twix bars, thats a total of 10 individual candy bars
12 vanilla wafers
3 Tbs butter
1/8 tsp salt

for the brownie:

1 stick butter
1 c sugar
2 eggs
2/3 c cocoa powder
1/2 tsp salt
1/2 tsp baking powder
1 1/2 tsp vanilla
3/4 c all purpose flour
1/3 c chocolate chips
1/3 c white chocolate chips
1/3 c peanut butter chips

Directions:

for the crust:

Preheat your oven to 350ยบ. In the bowl of your food processor pulse the Twix bars, butter, sugar and salt until they come together to form a dough. Press the mixture into the bottom of a 9" pie pan and bake for 10-12 minutes. Remove carefully and set aside to cool.

for the brownie:

In a medium sized microwave safe bowl melt the butter and then add the sugar and mix to combine. Return the mixture to the microwave and heat for an additional 15-20 seconds, mixture will be shiny as you stir it. In a separate bowl whisk together the eggs, cocoa, salt, baking powder and vanilla until smooth. Slowly add in the butter/sugar mixture, stirring constantly, until smooth. Place in the fridge to cool 10 minutes. Toss the chocolate chips in the flour and add it into the cooled brownie mixture. Spread the batter over the pie crust evenly and bake for 30 minutes, or until a tester comes out with just a few crumbs. Remove carefully and cool completely. Slice and serve.

Yields 1 pie
